VEGAN vANILLA pANCAKES

Serving size: 4 pancakes

Cook time: 15 minutes

Ingredients:

  • 1 pouch of Spiced Vanilla Fugo 
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 cup of Aquafaba (liquid in a can of chickpeas)
  • 1/3 cup of dairy-free milk
  • 4 tbsp naturally flavoured soy yogurt

Preparation

  • In a bowl, mix Spiced Vanilla Fugo, baking powder, and cinnamon until completely blended. 
  • Mix Aquafaba and milk separately and add them to the bowl. Then add the yoghurt and mix until a batter-like consistency is achieved. 
  • Over medium-high heat, melt coconut oil in a skillet. Wipe down to prevent the pancakes from sticking.
  • Pour some batter into a pan and cook pancakes for a few minutes. Flip and cook for a few more minutes until cooked properly.
  • Top off your pancake stack with your favourite toppings- fruits, Nutella, maple syrup, chocolate chips, whatever!
  • Serve with toppings like syrup, fruit, puffed amaranth, coconut chips, etc.
